A quick question, would the method remain the same for fresh pineapple? I thought I'd have to pre cook it with sugar?!

You've added too much liquid so you'll need to add more icing sugar to stiffen it ❤

Thank you so much for this recipe! I dont often cook or eat sweet things but Pineapple creams are the exception. I usually buy these when I'm visiting the midlands as I cant find any good ones in London.Im curious to know why do we need to boil the pineapple juice instead of just mixing it in.My first attempt at these didnt look too pretty but they certainly tasted fantastic!Im making again this weekend and will hopefully do better!

hi tried to make pineapple tarts I cannot get icing to set it just runs of the cream my hubby loves them so would like to make rather than buy them hope you can helpthanks Brenda

You don't need to add all of the juice Brenda, just enough to water down the icing enough so it isn't too thick that it won't spread. Around 25mls or 2 - 3 tablespoons is plenty. The juice gets boiled down so it should be thickened any syrupy. If you add too much juice, just whisk in more icing sugar to thicken it back up x

@MoyraMack steps 12 & 13 Moira, whip it and spoon it on top of the crushed pineapple before pouring the icing layer on top x
