@HobbyHorseman I saw your recipe, with pork liver, pickling spices, and lean pork and it seems to bear only a passing resemblence to actual Midwest "Ring Liver Sausage". Ring Liver Sausage is characterized more by the addition of grain or groats. My Hillbilly Daddy from WV would've called it "Brawn" or "Haggis", and "Scrapple" and "Livermush" even creeped in. But, up here in the rust belt my German Mama, and by common nomenclature, called it "Ringleberwurst". It really has a lot more in common with haggis, than pate'...right down to the natural, large casing or encasement.

Good to know! I also make scrapple with buckwheat, also called spam, but not in sausage form, let me know if that reminds you of your ring liver sausage

@HobbyHorseman yes, certainly. These extended pate's or sausages are very common, everywhere. I have never had Blood Pudding or Sausage, would like to try that.

I remember jewish neighbors serving home made liver sausage with grains in them , called kishka. Have you googled those recipes?

@HobbyHorseman Ring Liver Sausage also has the interesting properties that it is never eaten "raw" from the ring with its rubbery, colonic, casing. It is always decased and fried...

@HobbyHorseman well, I was actually thinking of defending a Peccary, Javelina, or Skunk Pig against a Houston Rabbi. Maybe making it Kashrut, with common sense.

@HobbyHorseman I might make an argument for Peccaries, or a javelina, or Skunk Pig with a Houston Rabbi. Might get that Kashrut approval, just like muskrat, was a Catholic, no meat compensation.
