Used to raise and butcher over a dozen pigs a year. Nothing like home raised pork... I enjoyed raising the duroc breed. They were a hearty heritage breed and are more adept to lower fat diets. If you want to try something different, look at my Cajun bacon recipe... I would do this for customers and had nothing but rave reviews. And of course everyone at home loved it as well. From our previous chats I know you are comfortable with using Prague cure.

I just got a pound of Prague #1. I tagged your Cajun bacon recipe. I have a smoker made from parts of the Alaska pipeline by guys who worked on it. And I have a 1940’s handcranked deli slicer I got for $5 from Goodwill. I will butcher my Red Wattle pig this Fall, supposedly marbled red meat, and make bacon. Thanks!
