I think that it is in salads but seemed to be used much more when I was younger. Apart from “clever” restaurants, most people aren’t exactly creative with it, prime included but at least I’ll eat a whole beetroot on its own as a snack! Currently in Madeira for a bit of relaxation. Lotta fish!
