Very good pancakes! I did not let the batter rest for the 30 minutes and they were still light and fluffy. Great recipe.

I make these the night before and heat them up on the morning. They will keep 2 or 3 days in the fridge.

I took out the melted butter . The pancake is very light and flurry , however , it falls apart so easily. Will make it again .

This is what I use to make pancakes, but today I didn't have vanilla, and I substituted it for almond extract, and I added a little nutmeg and it was AMAZING. I should have tripled the recipe. Seriously.

I substituted almond extract for the vanilla and added a little nutmeg and they were so good. I've been using this recipe for maybe a year now and cannot go back to any box form of pancake. Also good with apples, cinnamon, and blueberries.
