Thanks for posting this recipe along with its interesting history. I’m curious: have you tried making these with a flour other than rye? Like all-purpose or whole wheat flour? I’m not a fan of rye and was wondering whether I could substitute.

Thank you Chris! I am sure other flours would work, if they have enough gluten to hold the cookies together. I am already using a very fine all purpose flour called cake flour, so you might want to substitute rye flour with spelt wheat flour or buck wheat flour. Flavorwise, you could add a teaspoon of ground pepper to replace the spicyness of dark rye flour. Let me know!
