I had this very dish last night. Loved the chunky veggies.

This recipe is so wrong: in order to make Spanish omelette you just need onion potatoes eggs and olive oil, sounds simple and plain, but it can be surprisingly spectacular if well made.

In the 70's I worked at a coffee shop in Huntington Beach CA and was introduced to the Spanish Omelet which was unbelievably delicious and like nothing I had ever tasted. I've searched for recipes online to no avail until I found yours which looks like what I had. The stewed tomatoes seem right.I'm so excited to have found your recipe, although I haven't tried it, yet. I'm very curious as to hide you came upon it. I see you wrote that it's 'your version' and wonder how and where you first tied

I grew up in that area in the 60’s and my Mom used to make her ‘Spanish omelette’ for us kids on special occasions. We LOVED it and I too have been looking for a similar recipe. None of us kids could remember the recipe but it looked just like this one! I’m going to make it tomorrow….I’ll let ya know. ;-)

While not a true Spanish omelette (Tortilla) it is a very tasty dish and I am craving one now.

oh yes, some sliced green stuffed olives go well in this too.

Is this sauce similar to the Spanish Omelette sauce served at Spires restaurants in Southern California? I grew up in so. Cal, and loved their spanish Omelettes.

Delicious! I lived in Southern California for years, and have been looking for a recipe for the Spanish Omelette served in California.
