I tried it with substitutes and I baked them right away. I substituted light olive oil for the vegetable oil, turbinado sugar for the brown sugar, I added a dusting of slivwred almonds and pecans and also raisins. Lastly I didn't have almond extract, so I used vanilla with a splash of coconut extract. I tasted the mixture (before adding eggs) and it was delish! They are still in the oven- hope they turn out great!
