I work and advocate for INDIVIDUALS WITH INTELLECTUAL /DEVELOPMENTAL DISABILITIES formerly known as Mental Retardation in the USA and when I ran across this recipe, I found the name to be offensive.

it just means 'slowed'.The dough bulk ferments in the fridge - retarding the yeast and bacteria. Thanks for sharing your thought.Looking forward to seeing your recipes!

yep, as in its retarded and contains spelt, rather than it has been poorly spelt/spelled
