Wikipedia seems to think that a brunoise is the product of cutting and cooking, and that may be the traditional explanation, but in my experience it refers to the type of cut, and doesn't imply cooking. In this case, I used very finely diced raw shallot. So the oil is only for the salmon, and use just enough to coat the pan.
