yes! I'd love to see a vegan version! I actually just made the spice mix today so I'll go ahead and publish that recipe too (it makes a big amount though so you may want to reduce a lot!)

I've been using crackers -something with hardly any flavor like "Carr's Table Water Crackers". Maybe thin cookies or something would work too??

I heard some people use aluminum foil but you have to remove it after baking, which seems annoying

All right. the store near me has these really thin Swedish gingerbread rounds that should work.

Oh good idea! The gingerbread spices probably match pretty well with the lebkuchen spices ;)

Yes - what's really used is "oblaten" which are basically communion wafers, but they are hard to find so you can use crackers or something like that as a substitute. The reason to use them is that the "dough" is very thick and sticky and can't be baked directly on the baking sheet or even wax paper, etc. The mixture is put on top of the oblaten (or in my case crackers), and then baked in the oven.

I guess I can find them in one of the store I know. I ve seen chocolate oblaten wafers. Are we looking for non flavor oblaten ? Does it matter ?

I've never heard of chocolate ones! The ones used for Lebkuchen don't have any flavor and are really thing. You wouldn't eat them by themselves - i think they're just for making lebkuchen, heh
