Your hashbrowns look great! Mine never come out that beautiful. I dont have a cast iron skillet. Any suggestions?

Dry 'em out good, and use a lot of oil. I also don't pack them too tightly. Cast iron is worth the investment, but I think you can get decent results still. Just takes patience. Let them sit there awhile on medium heat until you're sure they're nice and golden.
