One great piece of advise is to save some of the water where you boiled the pasta to thicken the sauce. That way the flour is already diluted evenly. This works great for Alfredo or Pesto Sauce!

I make my own pasta. I salt the water and bring it to a rolling boil. Fresh pasta only takes 6-8 minutes to cook. Also, do not put oil in the water. Many people do this so the pasta doesn't stick. However, this makes the sauce slide right off rather than coating the pasta well. My best tio if you're using store bought pasta and a tomato sauce, cook the pasta IN the sauce. Makes a world of difference!

Thanks for reminding me that the cold water works better with dry. :)

I unfortunately can't eat real pasta anymore and have to eat gluten free. Excluding homemade and the Banza brand I found most brands become a mushy mess after boiling then mixing with whatever you're making. So I found that soaking in warm water until just tender not completely done then finishing in the meal let's GF pasta keep its shape. Right now this is my favorite dish to make pasta with, other than a lasagna with homemade noodles of course!

I like to add a little olive oil to leftover pasta to keep it from going dry. :)

So you basically cover the pasta with cold water by 2 or 3 inches above the pasta line. Throw in roughly 1/3 to 1/2 the salt you usually do, turn it on to medium high, let it come to a boil for a minute or two and make sure it's a gentle, rolling, but not sputtering boil, and then you gotta check on the time depending on the pasta, but if I cut the pasta open and I have just a little opaqueness left in the center, it's usually 2 minutes from al dente. Let me know how you like the method!

Another good tip is pasta into sauce rather than the other way round. It seems to get a better coating on the pasta 🍝

Never refresh the pasta, never put oil on it. Take it out from the water and Straight from the boiling water to the sauce. Use a built in strainer pot so the work will be 1-2-3. If sauce is hot, boil the water a couple minutes less than indicated in the package, its own heat and the sauce heat will finish the cooking, so you will have always al dente pasta

I use a little salt when boiling but sometimes I am pressed for time and I just break the spaghetti in half and put it straight in the pot of meat gravy

That way it soaks up all the sauce and you can skip the boiling all together

I have yet to try putting the dry pasta straight into the sauce. Sounds super convenient. Will have to give it a shot soon.

I always put salt in my boiling water!! I always use cold water too! Cold water helps it boil faster (because of the salt). I always ALWAYS!!! Make sure I mix a little bit of olive oil (after I drain the noodles) into the noodles. That helps them to be soft and not stick!
