Looks like the ice water was left out of the directions. I guess it's used to adjust the texture of the meat?

Also noticed that the meatballs game out a little gummy. Maybe I used too much starch, or the temperature was off do you think?

Usually too much starch, normally I used 50:50 for the meat and starch. And it tasted just nice.
