I love this idea and can think of so many ways to use it. How much in advance can rhey be made and how to keep them?

The recipe that suggested the milk soaking said they'll keep for a couple of days. I'd store them airtight on a piece of paper towel. I'd recommend the elephant garlic if you can get it because it's so much easier to peel and slice a large volume and the big chips will look cool. Wish there was a better way to leach out the bitterness.

I make candied citris peels and they also require several blanchings in water to remove bitternesd also a pain but worth it. I will look for the elephant

Oh, that makes sense. I've made those before, but without the blanching. I went through a marmalade phase as well, where this might have been useful, but I do kinda appreciate a little bitterness in a marmalade.

and a standard mandoline. I also added a little cracked peppercwith the salt after frying. What is the small mandoline you mentioned?

Thanks! I ordered one, it can be a pain to drag out the mandoline and clean it for small jobs

Cool. Lemme know if you find it useful. They're cheap and fun to have for salads and stuff. You can shave radish, carrot, asparagus.

We have lots of salads and I always have cucumbers and radishes, it was very inexpensive I will let you know when I get it
