Those look awesome. I was watching this 'Cooked' series on Netflix and there was an episode about fermentation. Lots of interesting stuff about bread-making.

I love the oven. Questions: 1- what is volcanic rock? 2- cracking happens naturally when you knead the dough?

hehe, it's my super small Japanese oven. It doesn't really get to the high temperatures I need though :( Q1 - Volcanic rock is just a kind of... rock (lol). It's has tiny, tiny holes and pores in it so it makes the steam very fine when pour boiling water over it, which is good for the bread (according to the baker I got them from, at least). They're not needed though. Q2 - do you mean the criss-cross pattern? That comes from making shallow slices like crisscross into the surface of each roll before putting it into the oven!
