Would the filling work if I left out the gelatin? I know it thickens it and helps the filling stay together, but maybe is there an alternative?

The filling will be to thin without some sort of stabalized since it's whipped cream based and the blackberrie juice is not thick enough to do the trick, however if you are not able to use gelatin you could decrease the cream by 1/2 and replace it with room temperature cream cheese, folding it in the remaing whipped cream after beating it smooth. The flavor will be different and it will be a bit heavier but will be stable and still good
