For spicy adobo try using 2 TBS whole peppercorns wrapped and tied in cheese cloth leave in full cooking time

cooked it and the taste was really terrible and sour..i was wondering if the rice vinegar or wine that made it really sour and not edible

Well, I'm sorry you didn't like it. If you search any adobo recipe almost all call for equal parts soy sauce and vinegar. And traditionally in Indonesia rice vinegar is used. The red wine is my addition, but the alcohol needs to be cooked out. I have cooked this many times with no complaints. I apologize for the bad experience and hope that you can find other recipes of mine that you can enjoy.
