Do you think it would work with coconut sugar or maple syrup / honey?

I think the sugar is for additional sweetness and to help thicken the liquid (eventually). You should be able to find online an equivalent volume for the ingredients you mentioned, to match the amount of sugar in the recipe. It will take longer to reduce due to the extra liquid, but should work. Let me know how it goes.
