Mmmm interesting - I've never done chicken soup like that (roasting before adding to soup). It's a great idea because you get the benefit of crispy chicken skin! I'll give it a try.... Have a great week Liz :-)

I know Becky. I've not made it that before either, but I really felt like chicken soup , and that seemed the quickest way to make some. And yes, the crispy skin is an added bonus!xx
