Yikes, this seems very similar to my Pop-pop's recipe that I remember as a child ... and what I was looking for. He would dust the top (plums) with powdered sugar. Quick question(s), do you roll the dough out in the pan? And when finished, does it have a doughy texture to it, not cake-like?

yeah powdered sugar is nice too! I remember some of the cakes in the bakeries had a kind of gelatine glaze over the plums too. For rolling out the dough, I usually start it on a floured surface to stretch it out a bit, then I finish rolling it out in the pan. The dough is basically like a sweetened bread dough, so yes, it's doughy rather than cake-like :) It's getting closer to plum season, can't wait to make this again myself!

Thanks so much. My mother's recipe was cake-like, however her father's recipe was a sweeter bread dough. Bakeries do a gelatine glaze over fruit. Home bakers can also accomplish this with a currant jelly I hear. I did see one recipe in my research that added a mixture of eggs, sugar, and flour for the topping (gooey?) and finished with almonds. Thanks again!
