I'm like you...I never measure anything. When I use the timer, it's just to remind me that something's in the oven or on the stove. When someone asks me how long to cook something, my reply is "when it's done!" Lol. I'm not a baker because it requires too much measuring. However, I make pancakes, biscuits, dumplings from scratch and never measure! I've been cooking for decades...developed a passion as a child. My mother never measured anything either and she would make cakes, pies, cookies by using her cupped hand as a measuring cup. I'm not into sweets as an adult but she made some great baked items. I like to can sofrito and give it away as gifts. I gave some to my Puerto Rican neighbor and she loved it though she said it was spicier than what she's used to.

A staple in my kitchen are Thai chiles. The ones I get from the Asian market are quite warm, about the heat of a regular habanero. I like to combine them with Scotch bonnets when I make hot sauce. I get the ripe ones so the sauce has a pleasant red/orange color which my customers really like! Keep up the good work!!!
