Elk is my second favorite, second only to moose. I traded a buddy of mine fresh lingcod for this elk roast. Super happy with how it turned out. Of course this is a beef recipe, but I like proving to people that wild game can be just as good, or better in my opinion, than mainstream meats.

Those two elk lasted me forever. Used it in replace of beef. I have never had moose. But I am willing to try anything once, given I have a source. Local meat market has rabbit and duck, two things I love but have never cooked.
