Still haven't got around to do them yet, but do you think I can make double portion of just "Die Maultaschen" and freeze half for later?

Yes! Freeze the raw Maultaschen and then just drop them directly in the boiling water :)

ah, you might want to dust them with some extra flour before freezing so they don't stick together!
