This dish looks wonderful, however I find the instruction confusing , as you first oil a pan for the fluffed up egg white and then add the egg yolk. That is fine and easy to understand. You then heat a slightly oiled pan, keep it away from the egg , add water and a lid? This has taken a few times to perfect. I am not sure what you mean to do with that pan. There is no disrespect intended whatever, as I said it looks lovely. Thank you .🌼🌞

I heat up the pan with the egg (and egg yolk!). I then add a little water away from the egg in the same pan and then put the lid on it. this is just to create a little steam, to cook the egg from all sides. I hope this helps :-)

Okay I think I'm going to give this a try over the weekend. Just to double check, you should oil the pan once before putting the egg in. Then you need to wipe in a little more oil before putting in the water, correct? (does the second time help with the steaming somehow?)

You oil it once, a little oil on kitchen roll. That way it will only be a thin coating on the pan. I then put the egg to one side of the pan, so the water can go in the other side. You probably can't prevent the water to get to the egg completely. The egg will become big under the lid and then go down again when you lift the lid! That's OK, it will still be light.
