I was just reading about Kvass in the book "The Art of Fermentation"! I'm so curious.... what is the taste like?

Well, rye kvass tastes different from beet kvass. If you are using other fruits or vegetables to make kvass, each would tastes disgustingly for sure. I personally feel my version of rye kvass tastes very similar to kombucha. sweet, tangy, and with crispy bubbling soda flavor. For the beet kvass, i add much less sugar, which gives me a more earthy and beety flavor with tangy twist. I love it, as long as I know what i put into my drinks. If you like kombucha, you will love kvass.

Wow sounds really delicious! I used to get kombucha when I was in the states. I'd like to try both versions. I didn't know about the rye kvass until seeing your recipe!

you may try smaller batches and work to get your optimal flavor. Sugar plays a huge key

Good idea, haha. I don't want to ruin a giant batch. In the book I was reading, the author said they have "Kvass trucks" in Russia that have smalls tanks of Kvass and they go around selling the drink on the streets. Pretty interesting.
