Its monosodium glutamate Sarah. The Chinese call it taste powder and it's been used in their cooking for centuries because it's almost pure Umami. It had a bad press in the West because it was in every tinned food, and there were health concerns, but it's actually necessary for brain function and is produced naturally in the body. A little now and then is perfectly fine. 😼😺
