I love gravy 😁 ...what I would like to know is the gravy really salty if so should I cut back on the beef stock and use some water to help cut the sodium?😮

Great question! Yes. She is slightly on the salty side so use low sodium stock if concerned with that. But, here in the South we do dig our salt!
