Oooh, have you ever tried baking the condensed milk in the can? A pastry chef I worked with used to do this. Saves a little time, and some dishes, but not sure if there are adverse effects.

You can do it on the stove top too but you need to stir continuously. Saves a bunch more time though!

I think I remember seeing our pastry chef do that once as well. Interesting, spotted another version today using a microwave.
