I always follow your recipes with great interest, thank you. There is a website from the university of georgia that publishes the results of scientific studies to prevent botulism. I always check it before posting preservation recipes. It is called Soeasytopreserve.com. Helps me make sure I publish safe preservation temperatures and times and methods. That's almost like what we use in Puerto Rico called "SOFRITO" the only thing I dont put in mine is vinegar...
