You say you do have a recipe that works? If you have it posted I’ll try it. This one is working out pretty good so far. I tasted today for the first time just to check and I’m amazed at the flavor.

I was just looking lol I was looking at you mirin recipe and that sounds really good. My only issue I’m having is here in Enugu I can’t find the yeast I need so I decided to try with instant yeast since it’s all I can find
