May I ask if you don’t mind? It’s obvious you know your stuff lol and I’m sure you laughed at my post of wine compared to your own 🤭 so as I mentioned I don’t have access to the types of yeast that you have, and some of the equipment. I can probably get a food grade plastic container but not that glass thing you have on top of your buckets. What can I actually accomplish with the instant yeast if anything?

You can add rice if your brew tastes good and ferment that and use for your next batch. You can heat and bend a a drinking straw in an S shape, fill the bend with water, glue on top of your cap. Voilà,
