I love this recipe! I'm curious as to why I need to n=bring the moisture out of the eggplant before cooking? Thanks!

@cook_114576952 it pulls out the bitter taste. when you pour of the juices it's dark liquid. It's just a preference of mine and my family will eat it that way. I have tried it the other way without the salting of the eggplant and they didn't finish their meal.
