Hi! Yes 😊 you can definitely freeze this dough if needed. I would suggest freezing it after the first rise. Just portion it, lightly oil it, and wrap it well. When you’re ready to use it, thaw in the fridge overnight, then take it out and let it come to room temp (rise again). You should then be able to shape and bake like normal. I would also suggest using it before you hit 2–3 months down the road, after that you might see a light change in its quality. For good rise and texture I’d try to use it before then.
