Thanks.The Zatar is totally optional but I think it adds a little something. Celery Soup can easily be bland. Like Sumac, we were introduced to Zatar years ago via the Ottolenghi Islington restaurant, which we frequently visited when Jennie lived there. Other spices have their own effect on the taste. I certainly think that Soured Cream works better that other forms of cream but it really just a matter of personal taste. As you know, I tend to “knock up” things from what we’ve got going spare. To me taste and using decent ingredients are critical.During 2020 I’m going to try to expand my repertoire, probably starting with one or two of your recipes!
