I miss fresh herbs 😭 We are growing some on the windowsill but we only planted them a few days ago .... so it’s still just compost 😂 Your Pho is inspired!

Me too! It’s amazing the things you take for granted isn’t it? I’ve found myself having to get more creative instead of going “oh I’ll just pop to aldi and pick up that one ingredient this recipe needs”

Yes me too, and I have to say that despite the awful circumstances, I have enjoyed the challenge of making do with what we have. I realise how reliant we’d become on picking up ‘essentials’ everyday, and we were becoming quite wasteful - not anymore!!
