Hello. My name is Michael. I'm a Chef but, also a seriously closeted fried SPAM food junkie eater and enthusiast. But, don't tell anybody tho . It's a bit of a secret in my stuck up community. But com'mon! After all I am a Southern girl AND ex- military from South Korea and Hawaii so what did ya'll expect! Excellent recipe tho fellow Chef Keith! Say? You ever tried fried SPAM in Mac and Cheese? It's definitely a rule breaker but still, delicious just the same! I'd personally love to see what else you can do with SPAM. After all, if anybody could do wonders with it - it would be you! I do a great Sushi and Sliders with it but, unfortunately, that's about it. 😔

yes spam, mac and cheese was a dish i grew up on, kinda a comfort food. I am going to say this but spam has had a bad rap here in the states. Its really a great meat to use in just about anything, casseroles, sandwiches, soups, salads, chili,.... to much to list. In world war II its was a necessity. In Hawaii its a main ingredient. its quick easy to use. I have heard people say noway will i eat that! I ask them have you ever tried it? they say no! So how can you not like something if you never had it? Its like people shun it because of reputation. I love it and will continue to use it till it becomes extinct lol

TESTIFY! AMEN BROTHER! AMEN! You ever tried it with Kimchi of any type? My students adore making it! P.S., fried SPAM on plain Hawaiian Rolls rock as well! I love the attention you're bringing back to it!

Yup! Fried SPAM and over easy fried eggs on sweet Kings Hawaiian Rolls are the best! I'm making some now! Nom nom nom! Thanks for reminding me! The kiddos love these!

substitute the egg for pineapple in this recipe and substitute cheddar for mozzarella cheese.
