Creamy zucchini noodles and mushroom

After a very long day at work, I had to face the stove and my body was just not having it. I opened my fridge to see what I can whip up quickly so the family can eat and saw a packet of zucchini noodles staring at me, that was it. This dish was so quick and delicious, it can be served as a side or main.

Melt butter in a pan over medium heat. Add mushrooms and cook, stirring regularly until they begin to sweat. This takes about 5min.

Add heavy cream to the mushrooms and simmer for about 8 minutes or until it thickens making sure not to over cook the cream as it will begin to separate.

Add zucchini noodles to the creamed mixture, season with salt to taste and remove form the heat. Serve immediately with any meat of your choice or enjoy as it is.
