Firstly cut all the veggies into medium long pieces and wash them well. Mix them with salt and let them stay for 2 minutes.

Fry the dried lentil dumplings in oil. Keep them aside. Now fry Plantains, Broad Beans, Sweet Potatoes and Potatoes together, after 5-7mins add Drumsticks, Eggplants, Papayas and fry all of them. Now keep them aside. Now fry the bitter Gourds separately. Keep them aside.

In the same oil now sizzle some Panch Phoron, dried Red Chillies and Bay leaves, add Ginger paste, stir well then add Mustard and Popy seeds paste, Jeera paste fry for 1-2 mins, add coconut paste and some water. Add salt..

Now add all the fried veggies in the pan, add milk mixed up with a pinch of maida, then add 1 spoon of sugar... Bubble on low heat for 3 mins then add the fried lentil dumplings lastly. Now sprinkle Celery powder. Keep cooking for 2-3mins more until Shukto is ready. (Remember in this dish we don't use turmeric or haldi). 😊
