The real flavour difference could come from the fact that it burn vegetables a bit, instead of steam, which is the biggest surprise.

I have noticed that this is the same approach used in Indian cuisines (whereas in European cuisine we often take care not to brown the onions for example), but when making many of the traditional curries you brown the onions a lot more than I would usually ... interesting!
