Very nice. We do miss the variety of potato salads that we enjoyed on our regular trips to Austria and Germany. Maybe this will spur me on to make some myself! John

Thank you both @Aunty Eiko and John A . I usually make potato salad with whatever is going, many people use gherkins personally I rather put apple, capers, pickled baby beetroot or pineapple as a souring agent.
I think once you got the basics one can go by preference. Curry , garlic ,a little saffron or paprica work very well too as do coriander, tarragon or mint. Potato salad is so versatile and does not need to follow any rules. I often use oliveoil and raspberry vinegar with green or mixed leaves for a summery version and unpeeled cooked new potato.
