Use It Up Parsnip Soup

Sonia @sonia
Today I really had to use up the sad bag of parsnips in my fridge … some of them were sprouting and threatening to evolve into a new life form. So I made this soup which I wasn’t feeling particularly enthusiastic about if I’m honest - BUT it is such a lovely surprise! Simple and really really delicious 😋 #lunch
Cooking Instructions
- 1
Fry the onions in a splash of oil for about 5 minutes or so.
- 2
Add the dried herbs and onion granules and stir well. Then stir in the veg.
- 3
Fry the veg over a reasonably high heat to get a little browning colour on them and add extra flavour.
- 4
Then pour in the stock, stir well and leave to simmer with the lid on for 30 minutes.
- 5
When the veg is soft and tender, blend until smooth. Taste here and add salt and pepper to taste.

Parsnip Soup
I attempted to recreate a soup I had at Fleur de Sel, a restaurant in New York. (The soup at the restaurant had boiled chestnuts added to it.)I think it would be hard to find parsnips in Japan, but if you can get them, please try making this soup. By the way, parsnips are part of the parsley family. Recipe by K-ana

I like to serve this soup warm or cold in small glasses as amuse-bouche. I prefer it mild in order to taste the subtlety of the ingredients but if you and your guests are into bolder flavors, add cayenne or hot sauce.

Lemon chicken soup
I decided to try something new and ordered the lemon chicken from a Chineese restaurant, it was really good. I really like soup and was looking up lemon chicken soup recipes, they all involved a croc-pot. I am not a big croc-pot user, so I decided to try to come up with something inspired from the recipe i saw online. I saute the vegetables before putting in soup to save time. It came out very good. I also like to cook chicken myself & not use rotisserie chicken from the store in soup.

Chilled Zucchini Soup
I love making potage soup with various vegetables. When I used zucchini, it turned out tastier than I expected and was a big hit, so now I make it a lot in the summer. In Step 3, the recipe calls for 200 ml of water, which should be just enough to cover the vegetables.Adjust the thickness of the potage to taste depending on the size of the zucchini.Note: Zucchini is a squash variety, and it's low in calories and is rich in carotene. I just came up with this recipe when I was cooking dinner and realized that I completely forgot to make soup.- Olive oil has its unique aroma so you can omit it if you don't like it.- You can get a rich aroma by using butter.- If you are adding any ingredients, put them in Step 1. It's good with bacon, sausage, onion, cabbage, carrots, spinach etc. Recipe by A-jin

Gooey, Cheesy Soup Pasta with Soft-Boiled Egg
This is a quick and warm dish to make on cold days! Just by using standard breakfast ingredients such as wieners, egg, and cheese, you can make a stylish soup pasta. The texture is perfect and it's great for hungry kids!If you use a type of pasta that cooks quickly, you won't need to boil it separately but can just add it right in, which saves time. Keep stirring it so that it doesn't stick to the bottom of the pot. I also suggest trying different arrangements using any leftover vegetables from the refrigerator! Recipe by Nisshin foods

Turkey And Asparagus Soup
In this recipe, I never really measured, there is no set measurements as this is a recipe to use up all vegetables and meat laying about in your house. Save the tips of the vegetables and use them as a thickener for the soup. I had a whole bag of asparagus tips to use up so I saved them and added to the soup, the asparagus are what give this soup the flavour. This tastes a bit like split pea soup. Cooking the juices out of the carcasses and bones is a great way to add fantastic flavour to soups.
