Golden Pineapple Cakes 🍍 Similar to Famous Store Recipe

✅ If you don't have premium butter, you can use regular unsalted butter, but you'll need to add a bit of salt (the aroma and texture will differ 😆).
✅ Premium butter is almost water-free and has a great aroma, plus it contains salt, so no additional salt is needed in the recipe.
✅ If using half premium and half unsalted butter, no extra salt is needed.
✅ Products made with all premium butter will be harder when cooled due to low water content. Reheat at 300°F (150°C) for 1 minute, then let it sit for 1 minute for better taste.

✅ If you don't have condensed milk, add powdered sugar as needed. This pastry recipe pairs well with store-bought pineapple filling for a moderate sweetness. Suggested powdered sugar amount is 1.4 to 1.8 oz (40-50 grams).
✅ Milk powder can be omitted.
✅ Cheese powder can also be omitted.
✅ This will only slightly affect the buttery flavor 😅 and won't impact the process.

  • 2.8 oz (80 grams)premium butter
  • 2.8 oz (80 grams)unsalted butter
  • 1.6 oz (45 grams)powdered sugar
  • 1egg yolk
  • 1.2 oz (35 grams)condensed milk
  • Dry Ingredients
  • 1 oz (30 grams)milk powder
  • 0.5 oz (15 grams)cheese powder
  • 7 oz (200 grams)cake flour
  • Filling
  • 8.5 oz (240 grams)store-bought pineapple filling

Steps

    Let the butter soften at room temperature and beat until smooth. Add powdered sugar and beat until well combined. Add the egg yolk and beat until absorbed by the butter, then add condensed milk and beat until smooth. Next, add the dry ingredients and mix with a silicone spatula until no dry flour is visible and the dough is not sticky.

    Wrap the dough in plastic wrap and refrigerate for 30 minutes.

    Divide the filling into 16 portions, each weighing 0.5 oz (15 grams), and roll into balls.

    Divide the pastry dough into 16 portions, each weighing 1 oz (30 grams), and roll into balls. If the dough becomes too soft, return it to the refrigerator.

    Flatten a piece of pastry dough in your palm, place a filling ball in the center, and seal it by pinching the edges together. Roll into a ball.

    Place the ball into a pineapple cake mold and flatten it with a flattening tool. Smooth both sides and refrigerate again to set. Preheat the oven to 350°F (180°C).

    Bake the first side at 340°F (170°C) on the top and 300°F (150°C) on the bottom for 15 minutes.

    Flip and bake the second side at 300°F (150°C) on the top and 340°F (170°C) on the bottom for 10-12 minutes.

    Once done, remove from the oven, let cool, then seal in packaging for storage.
