@Welderwoman which ones can't you find? I can't find lemongrass, which should be in here. Or shrimp paste. So I have to buy powdered shrimp from the Mexican aisle.

@Welderwoman for shrimp powder, you can make a heavy broth with bay shrimp, or turn them into a paste. Mirin is just a sweet rice wine. Can be omitted and use a little extra brown sugar. Coconut amino is just a different version of soy sauce. Sub with the low sodium soy sauce. The curry paste should be in the Asian section of any Safeway, or Kroger, or whole foods... not sure what major grocery chain you have in your area.

@Welderwoman lol. It's not much bigger out here, but we have a Safeway. It only has about half of the items that it should though.

@Welderwoman that's a bummer. If I can't find something I have a 3 hr drive and a 45 minute ferry boat ride to get to anywhere. Been ordering certain things online.
