Today, I had a conversation with my friend about her experience cooking and eating turkey. She said the taste is different from duck, free-range chicken, and broiler chicken. According to her, turkey meat is more flavorful. Is that true? Personally, I’ve never tried it before—not only because it’s not easy to find but also because its large size makes it more challenging for me.

Yes, your friend has the same taste impressions I have. Of all the different birds she described, turkey is for me the mildest and driest. And a large turkey is much easier to dry out than a small one. That is why people fill the turkey with stuffing and marinade them to keep it moist, whereas duck and chicken can be prepared without stuffing or marinade. Especially the breast dries out before the legs are done, if cooked whole. I flatten them with spatchcocking, and cold smoke or quick cook them. And gravy is more often served with turkey to keep the meat moist.
