Mokimo is one of the foods which is being prepared by people from the central region of Kenya. It is sweet with beef stew
Cooking Instructions

Peel off the potatoes and wash. Then remove the hard fibre from the pumpkin leaves then wash and cut.

Add oil in a sufuria and heat then add onions. After its cooked add potatoes and stir then add the pumpkin leaves. Then stir and add water and salt. let it boil for 30 minutes or until the potatoes are tender.

Drain excess water and add the beans and maize to the mixture. mash the whole mixture using a cooking stick till it mashed or smooth.

You can now cook your beef stew and serve with the mokimo.
