sure just don't simmer it in the gravy for an hour personally I like simmering it because it makes the hearts a little more tender but that's the fun thing about a recipe you can always alter it to your own liking thus creating perhaps a similar or even different recipe... I always say a recipe is just a guideline to open up the creativity of one's own mind

you also don't have to Brown the flour first but I just like the richness, color and flavor that Browning the flower gives to the gravy

I'm definitely getting stressed with how badly I want to eat this. Fried chicken hearts are kind of the staple food of my family, but never once had I thought about the putting gravy into the mix. Damn. Such a simple and obvious concept has never given me such strong feelings before lol
