I use canned but if you can get fresh, I would recommend them. I used to live in New Mexico, I love green chiles as well.

I only use fresh or frozen Hatch Green Chilies living here in NM. There's just nothing like them is there?!

Go thru Amazon and order the frozen Bueno Hatch Green Chile brand Mike. Or, you can also order the powdered version of green chile's. Both are delicious!
