Sure! I would cut the chicken breast into 1 inch chunks and after covering them in the mayo mixture, coat them completely in the breadcrumbs. You would have to bake them on a wire rack or else the bottoms would be soggy. I would cook it about 20 minutes. You could still use a meat thermometer to make sure the internal temp is at 165 degrees. Thanks for your comment! 😄
