Peruvian dishes are so very good. Your very right about the fusion of cuisines. Chinese, Italian, Spanish and of course South American. Countless varieties of corn, maize, the most varieties of fish in the world and over 2400 yes over 2400 varieties of potatoes. I truly love Peruvian and surrounding areas cuisine.
